Yakimeshi (Fried Rice)

I have always loved Japanese food; actually, it is my favorite!! But as a good Mexican, I like adding salsa to every food, and Japanese food is not the exception. You will be surprised about what an excellent pairing is fried rice with salsa!


  • 2 cups jasmine rice

  • 4 cups water

  • 4 carrots, diced

  • 3 zucchinis, diced

  • 2 garlic cloves, finely chopped

  • 2 Tbsp butter

  • 2 eggs

  • Soy sauce to taste

  • Sesame oil to taste

  • Salt and pepper

  • In a saucepan, combine rice and water. Bring to a boil. Reduce heat, cover, and simmer for 20 minutes.

  • Melt butter in wok or large skillet over medium high heat. Add garlic, stirring frequently, for 30 seconds. Then add carrots, until softened, around 5 minutes.

  • Add zucchini, and cook stirring until done, around 3 minutes.

  • Crack eggs on top of vegetables and cook, stirring quickly to scramble eggs with vegetables.

  • Stir in cooked rice. Add soy sauce, and toss rice to coat. Add salt and pepper to taste. Drizzle with sesame oil and toss again.
