2 cups jasmine rice
4 cups water
4 carrots, diced
3 zucchinis, diced
2 garlic cloves, finely chopped
2 Tbsp butter
Soy sauce to taste
Sesame oil to taste
Salt and pepper
Cielito Mio Gourmet Salsa with Dried Chiles
In a saucepan, combine rice and water. Bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
Melt butter in wok or large skillet over medium high heat. Add garlic, stirring frequently, for 30 seconds. Then add carrots, until softened, around 5 minutes.
Add zucchini, and cook stirring until done, around 3 minutes.
Crack eggs on top of vegetables and cook, stirring quickly to scramble eggs with vegetables.
Stir in cooked rice. Add soy sauce, and toss rice to coat. Add salt and pepper to taste. Drizzle with sesame oil and toss again.
Serve and add Cielito Mio Gourmet Salsa with Dried Chiles on top to get a delicious kick to your rice!
