Fideo Seco (Dried Noodles)

Fideo Seco is a traditional entree in Mexico. I remember having it in my house when I was a little kid, and since then, I love it! Now I cook it for my kids, and it is also among their favorites. 😋 It's like a fideo soup, part of almost every house daily meal, but with no broth. Instead, they let the fideos get dried, so you get a Mexican "pasta." It's served with avocado, shredded fresh cheese, cream, and Cielito Mio Gourmet Salsa to add a delicious spicy flavor! 🌶🌶


  • 3 Roma tomatoes, cut in half

  • ¼ onion chopped

  • 1 garlic clove whole

  • 1 cup water

  • 1 tsp. chicken bouillon

  • 2 tablespoon oil

  • 1 7 oz. package of noodles

  • Cielito Mio Gourmet Salsa with Dried Chiles


  • Place the tomatoes, onion, garlic, water, and bouillon in a blender, and blend until smooth. Set aside until ready to use

  • In a large stock pot, heat the olive oil. Add noodles, and stir constantly until it is golden brown, about 2-3 minutes. Do not leave this alone or it will burn.

  • Add tomato mixture, stir and cover with a lid. Reduce heat to low.

  • Cook for 10-12 minutes, or until the liquid has absorbed.


  • Serve with avocado, fresh cheese and sour cream (or Mexican cream) and top with Cielito Mio Gourmet Salsa with Dried Chile Cielito Mio Gourmet Salsa with Dried Chiles.

  • If you want it spicier, you can add Cielito Mio Gourmet Salsa with Dried Chiles when you add the tomato mixture to the noodles.
