Fideo Seco is a traditional entree in Mexico. I remember having it in my house when I was a little kid, and since then, I love it! Now I cook it for my kids, and it is also among their favorites. 😋 It's like a fideo soup, part of almost every house daily meal, but with no broth. Instead, they let the fideos get dried, so you get a Mexican "pasta." It's served with avocado, shredded fresh cheese, cream, and Cielito Mio Gourmet Salsa to add a delicious spicy flavor! 🌶🌶
3 Roma tomatoes, cut in half
¼ onion chopped
1 garlic clove whole
1 cup water
1 tsp. chicken bouillon
2 tablespoon oil
1 7 oz. package of noodles
Cielito Mio Gourmet Salsa with Dried Chiles
Place the tomatoes, onion, garlic, water, and bouillon in a blender, and blend until smooth. Set aside until ready to use
In a large stock pot, heat the olive oil. Add noodles, and stir constantly until it is golden brown, about 2-3 minutes. Do not leave this alone or it will burn.
Add tomato mixture, stir and cover with a lid. Reduce heat to low.
Cook for 10-12 minutes, or until the liquid has absorbed.
Serve with avocado, fresh cheese and sour cream (or Mexican cream) and top with Cielito Mio Gourmet Salsa with Dried Chile Cielito Mio Gourmet Salsa with Dried Chiles.
If you want it spicier, you can add Cielito Mio Gourmet Salsa with Dried Chiles when you add the tomato mixture to the noodles.
