Fish tacos are my son's favorite food, and it's a great way to make your kid (or your whole family) eat fish!! This recipe is an excellent filling for tacos, though you can also have it with salad or rice; either way is delicious!!

Ingredients:
Blackened Seasoning Ingredients:
1tsp. cayenne pepper
1 tsp. garlic salt
1 tsp. dried thyme leaves
1 tsp. dried oregano leaves
½ tsp. salt
Fish Ingredients:
1 Tbsp. oil (avocado, coconut or canola)
1 lb. Rockfish (or any other white fish) - about 4 fillets
Avocado Sauce:
1 avocado
1 cup of water
2 cups of cilantro with stems
Lime juice (½ lime)
1 large garlic clove
½ tsp. Himalayan salt

Directions:
In a small bowl mix all the ingredients for the seasoning. Set aside.
Pour oil in a pan and heat over medium high.
Rinse the Rockfish in cold water and pat dry with a paper towel. Pour seasoning on top of the fish and using hands rub it into the fish and around the sides and bottom.
Add it to the pan after oil is heated. Cook 6-10 minutes or until the center is cooked and flakes apart when pulled with a fork.
Blend all ingredients of the avocado fish taco sauce in a blender.
Serve the fish and drizzle the avocado sauce on top. serve with a side of vegetables and rice or into tacos. Add Cielito Mio Gourmet Salsa to taste.
